I am limiting this to 1 and only one superpower. For instance, you can't say "I want Superman's power." You can choose one power, any power ever previously imagined or an original (if that's even possible). And no clumping of powers! A Telepath and A Telekinetic are different. You can, however, define your power's parameter.
For me, I would want to be a high level (omega, or a 4 or 5 in X3, or a level 12 or 13 in Babylon 5 ) telepath. To be more specific, telepathy as the ability to control another person through the use of the mind. Think of it, no assassin could get close to you because you could detect their intentions and stop them from murder by just thinking about it! A telekinetic power is sexy, but not for me.
Although, I do have to admit that the ability to fly is intriguing, especially if you have ever been in a big city traffic jam, or if speeding tickets are becoming a major expense. Being able to change a channel on TV by blinking also holds the same real world appeal.

Definitely superspeed. You can do practically anything with this power. I still contend that The Flash should be the most dangerous superhero on the planet with his powers not running around Central City fighting Captain Boomerang or Captain Cold etc.
Empathy would probably be my first choice. It would save me a lot of embarrassment when dating and it would be a great asset to other people. Plus, I could always deny the power and live a semi-normal life if I wanted and still use it. People who have more obvious powers can't hide them and use them as often.
Super speed is great, mainly because of the higher metabolism needed to support it. "I just ate a horse, and still no spare tire!" 8) Yet, what happens if you trip and fall at 100 mph? Without invincibility, exceptionally fast healing like Claire's, or a motorcycle helmet, its street pizza for speedy. I only think of these things because it really hurts when I trip and fall at 0.002 mph. (Like Eric in That 70's Show, every once in a while the Packer's helmet must go on...)

If I was to select one power (which would sneakily bring some more), it would be telekinesis. Controlling objects would allow me to fly, become strong, etc. All in one package

I don't think Telekinesis would allow you to fly because you must see the object your moving. Psychokinesis would allow you to fly because you don't have to see yourself. Then again, I could be using a different definition of telekinesis than you are.
